I am now offering private chef services as a fully insured independent contractor through my company (requiring use of a residential or county permitted kitchen). I will be aiming to secure a commissary kitchen and appropriate health permits to start catering operations, likely by next Spring. I do not have the capital to apply for permits in Washoe, Nevada or Douglas counties right now. Washoe County alone is around $2,000 first year, $1300 annually ongoing. The permitting process for caterers in each of these counties is expensive and arduous. 

Also, I do not have any clients, a source of income, and have significant revolving credit payments to manage already. I will be continuing to work on menu development, HAACP plans, and completing applications to submit when I have the money to pay the fees. I will also be looking into other counties for setting up catering operations. My long-term goal for this company is to eventually securing financing for a (relatively) inexpensive commercial real estate  (for example in Sierra County), to run a cafe that is part of the local culture and provides a valuable service to the community.
